Broccoli Stir Fry



  • 1 TB olive, or avocado oil

  • ½ red onion, thinly sliced

  • 1 red pepper, peeled and de-seeded

  • 1 large head of broccoli

  • 2 medium sized carrot, peeled and thinly sliced

  • 1 green onion, chopped

  • 1 TB sesame seeds

  • Juice of ½ lime


  • 5 cloves of garlic, minced

  • 2 tsp sesame oil

  • ¼ cup coconut aminos

  • ½ cup vegetable broth, or water

  • 2 tsp maple syrup

  • Salt and pepper

  • 2 tsp arrowroot starch


  1. Combine all sauce ingredients together in a medium bowl, set aside.

  2. Over high heat, add olive, or avocado oil to a large skillet.  Add red onion, broccoli and carrots to the pan. Season with salt and pepper and sauté for approximately 6 minutes.

  3. Reduce heat to medium.  Add peppers and sauce. Stir constantly and cook for another 3 minutes, or until sauce is thickened.

  4. Remove from heat, stir in green onions, lime juice and sesame seeds.  

  5. Serve over cauliflower rice and grilled Bok Choy.

Grilled Bok Choy:

  1. Cut Bok Choy in half lengthwise.  

  2. Season cut side with olive oil and your choice of seasonings.

  3. Grill on a hot grill, face down for approximately 5 minutes, or until leaves begin to wilt.
