Broccoli Stir Fry
1 TB olive, or avocado oil
½ red onion, thinly sliced
1 red pepper, peeled and de-seeded
1 large head of broccoli
2 medium sized carrot, peeled and thinly sliced
1 green onion, chopped
1 TB sesame seeds
Juice of ½ lime
5 cloves of garlic, minced
2 tsp sesame oil
¼ cup coconut aminos
½ cup vegetable broth, or water
2 tsp maple syrup
Salt and pepper
2 tsp arrowroot starch
Combine all sauce ingredients together in a medium bowl, set aside.
Over high heat, add olive, or avocado oil to a large skillet. Add red onion, broccoli and carrots to the pan. Season with salt and pepper and sauté for approximately 6 minutes.
Reduce heat to medium. Add peppers and sauce. Stir constantly and cook for another 3 minutes, or until sauce is thickened.
Remove from heat, stir in green onions, lime juice and sesame seeds.
Serve over cauliflower rice and grilled Bok Choy.
Grilled Bok Choy:
Cut Bok Choy in half lengthwise.
Season cut side with olive oil and your choice of seasonings.
Grill on a hot grill, face down for approximately 5 minutes, or until leaves begin to wilt.
