Egg Muffins

Ingredients: 

    • Chopped veggies 

    • 1/4 cup any type of compliant cheese (optional, I used goats cheddar) 

    • 8 Omega-3 Eggs 

    • 1 TB goat’s milk or water  

Directions: 

  1. Pre-heat the oven to 350 degrees 

  2. Grease a 12 cup muffin tin with coconut oil spray, or ghee. 

  3. Chop desired veggies and add to a medium bowl. 

  4. Add cheese, (if using). Mix well. 

  5. In a separate bowl, scramble the 8 eggs with milk or water 

  6. Add the eggs to the veggies and mix well. 

  7. Pour egg mixture into greased muffin tins. 

  8. Bake for 20-25 minutes. Salt and pepper to taste when finished and serve with mashed up avocado 

OR 

Prepare veggies in a similar fashion, but instead of scrambling the eggs, crack one omega-3 egg on top of each muffin tin cup (as pictured above)
