Grain Free Cheese It’s



  • 1 cup of cassava flour

  • 1 tsp salt

  • 7 oz of goat cheese, shredded

  • 1 TB palm shortening

  • 2-4 TB cold water


  1. Preheat the oven to 375 degrees

  2. Pulse all ingredients, expect water, in a food processor until little pebbles form

  3. While pulsing, slowly add water 1 TB at a time until the dough comes together

  4. Split dough into two balls and place on separate baking sheets

  5. Carefully roll out each ball of dough to an even thickness of about ⅛ of an inch

  6. Cut dough into squares using a pizza cutter

  7. Carefully separate squares (this is important as the crackers will stick together during backing)

  8. If desired, use a fork to mark each crackers with a dot in the middle  

  9. Sprinkle with salt (or any other seasoning of your choice)

  10. Bake for 17-23 minutes, checking often and removing any crackers that are fully cooked

  11. Store in an airtight container (these can also be frozen)
