Irish Soda Bread

  • 1 ⅓ cups almond flour

  • ⅓ cup arrowroot flour

  • ⅓ cup tapioca flour

  • 1 TB monkfruit sweetener

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • ⅓ cup buttermilk (heavy cream + ½ TB apple cider vinegar, set aside 1 ½ TB for wash)


  1. Mix the cream and vinegar together, then set aside and allow to sit for 10-15 minutes.  This will make a rich buttermilk.

  2. Mis dry ingredients together

  3. Add liquid ingredients and mix thoroughly

  4. Cover bowl with plastic wrap and allow to rest for 15-20 minutes

  5. Oil a baking sheet and your hands, then dump the dough onto the center of the baking sheet.

  6. Using your hands, form a round loaf about 2” high.

  7. Brush loaf with buttermilk.

  8. Using a sharp knife, cut a shallow X into the top of the loaf.

  9. Cover the loaf with oiled plastic wrap, and allow to rest for another 15-20 minutes.

  10. Preheat oven to 375 degrees.  Bake for 40-45 minutes, or until the crust is well browned.

  11. Remove from oven and brush again with buttermilk.  

  12. Allow to cool completely before cutting.
