Mussels with “Irish Soda Bread”
2-3 pounds of fresh mussels
1/4 cup European butter, such as Presidents, or Ghee
1/2 cup of finely chopped shallots
6 cloves of garlic
Fresh parsley to taste
Juice from 1/2 a lemon
Zest from 1/2 lemon
If necessary, de-beard mussels.
Wash mussels in cold water.
Place cleaned mussels in a large sauce pan, and add 1/4 of water.
Steam on high for approximately 5-10 minutes, shake the pan occasionally and watch for when most mussels open.
Remove from heat, reserve liquid and set mussels aside in a separate bowl.
Return the pan to the stove and turn heat to medium high.
Melt butter, then add shallots and garlic and sauté until tender and fragrant.
Add lemon, lemon zest, parsley and reserved liquid to pan. Bring to a boil.
Pour garlic butter over mussels. Serve with sliced lemon, and complaint bread for dunking, such as Irish Soda Bread.
