Pan Seared Salmon with Spinach Cream Sauce

  • Salmon:

    • 1 lb wild caught salmon

    • 1 tablespoon avocado oil

    • Salt and pepper to taste

  • Sauce:

    • 1 tablespoon butter

    • 1/2 cup of cream

    • 2.5 ounces of spinach

    • 1 tablespoon freshly squeezed lemon juice  


  1. Pre-heat oven to 400 degrees

  2. Bring salmon to room temperature.

  3. Cut into 4, 4oz pieces

  4. Salt and pepper to taste

  5. Heat a large iron skillet, with 1 tablespoon of avocado oil over high heat.

  6. When hot, place salmon skin side down in the pan and sear for 3-5 minutes (just until the edges start to change color.

  7. Place skillet in preheated oven and continue to cook salmon for another 5-7 minutes, or until your liking.

  8. Meanwhile, add cream, butter and spinach to a small saucepan.

  9. Cover, and simmer on low heat until spinach is wilted.

  10. Remove from heat, and add lemon juice.

  11. Mix well and serve over salmon.
