“Pumpkin” Pancakes



  • ⅔ cup almond flour

  • ⅓ cup arrowroot flour

  • ½ tsp baking powder

  • 1 tsp compliant sweetener such as Swerve or Monkfruit

  • 1 tsp pumpkin pie spice

  • 2 eggs, beaten

  • ½ cup sweet potato puree

  • 1 TB butter, melted


  1. In a small bowl, whisk together the eggs, sweet potato and melted butter

  2. Then,  add dry ingredients and mix well

  3. Warm an electric griddle to medium heat

  4. Lightly grease with compliant butter, or ghee

  5. Add a ¼ cup of mix to the warm griddle

  6. Cook until bubble form on the outside of the pancake, flip and continue cooking for an additional minute

  7. Drizzle with honey, and serve

**If the batter is too thick, you may need to add a few teaspoons of water
