Sheet Pan Veggies



  • 2 small to medium sized sweet potatoes, diced  

  • 1 lb brussel sprouts, quartered

  • 1 small rutabaga, diced  

  • 2 small shallots, thinly sliced

  • 2 TB olive oil

  • Salt and pepper to taste

  • 1 small organic apple or pear, peeled and diced  


  1. Preheat oven to 425 degrees

  2. Prepare a baking sheet with foil or parchment paper

  3. Slice and dice all veggies

  4. Add veggies to a bowl and drizzle with olive oil

  5. Add salt and pepper, mix well

  6. Spread veggies in a single layer on the prepared baking sheet

  7. Bake in preheated for 20-25 minutes

  8. Stir veggies half way through cook time

  9. Add apple or pear in the last 5 minutes

**Alternatively, you could combine all the ingredients, add them to a grill pan and grill for approximately 30 minutes, turning every 10 minutes.
