Sweet Potato Tortillas
2 cups mashed sweet potato
¾ to 1 cup cassava flour
Olive oil (if needed)
Ghee (for greasing the skillet)
If potatoes seems dry, add a bit of olive oil to moisten them up.
Add cassava flour to mashed potatoes a little at a time.
Using your hands, mix until well incorporated to a dough consistency
Form 8 small balls.
Using a toritall press, or rolling pin and parchment paper, roll tortillas out to desired consistency.
Warm an electric griddle, or skillet over medium heat
Add a little ghee to your skillet or griddle.
When warm, place one tortilla in the skillet. Allow to cook approximately 2 minutes per side, gently flip and cook another 2 minutes.
Set aside, and repeat the process with the remaining dough balls.
